Blushed Petal Sugar Scones

Our Blushed Petal Sugar — a strawberry hibiscus infused sugar from The Steeped Pantry — was made for baking. The floral, fruity notes deepen in the oven, and that gorgeous pink sugar on top caramelizes into a crust that's as beautiful as it is delicious.
These scones are simple, stunning, and ready in under 30 minutes. Let's bake.
🌸 Blushed Petal Sugar Scones
Makes 8 scones
Ingredients
- 2 cups all-purpose flour
- ⅓ cup Blushed Petal Sugar, plus extra for topping
- 1 tbsp baking powder
- ½ tsp salt
- 6 tbsp cold unsalted butter, cubed
- ¾ cup heavy cream
- 1 egg
- 1 tsp vanilla extract
Directions
- Preheat your oven to 400°F and line a baking sheet with parchment paper.
- In a large bowl, whisk together the flour, Blushed Petal Sugar, baking powder, and salt.
- Cut in the cold butter using a pastry cutter or your fingertips until the mixture resembles coarse crumbs. Work quickly — cold butter is the secret to a flaky scone.
- In a small bowl, whisk together the heavy cream, egg, and vanilla. Pour into the flour mixture and stir until just combined. Don't overmix.
- Turn the dough out onto a lightly floured surface and gently pat into a 1-inch thick round. Cut into 8 wedges.
- Place wedges on the prepared baking sheet. Brush the tops with a little cream and sprinkle generously with Blushed Petal Sugar.
- Bake for 16–18 minutes, until the edges are golden and the sugar on top has caramelized into a gorgeous pink crust.
- Let cool for a few minutes — if you can wait that long.
